In​ ​2006,​ ​Dimitri​ ​and​ ​two​ ​childhood​ ​friends​ ​founded​ ​the​ ​CAVA​ ​Group’s​ ​first​ ​full​ â€‹service restaurant,​ ​Cava​ ​Mezze,​ ​a​ ​DC-area​ ​favorite​ ​that​ ​puts​ ​a​ ​modern​ ​spin​ ​on​ ​the​ ​authentic​ ​Mediterranean food​ ​and​ ​culinary​ ​heritage​ ​of​ ​their​ ​upbringing.​ ​Today,​ ​Moshovitis​ ​leads​ ​all​ ​culinary​ ​development including​ ​formulation,​ ​quality​ ​assurance,​ ​and​ ​menu​ ​development​ ​for​ ​both​ ​Cava​ ​Mezze​ ​and​ ​its​ ​sister fast​ ​casual​ ​concept,​ ​CAVA.​

A​ ​graduate​ ​of​ ​the​ ​Baltimore​ ​Culinary​ ​Institute,​ ​Moshovitis​ ​learned​ ​the culinary​ ​ropes​ ​in​ ​the​ ​kitchens​ ​of​ ​Washington​ ​DC’s​ ​finest​ ​restaurants​ ​including​ ​Vidalia,​ ​Kinkead’s​ ​and Bistro​ ​Bis.​ ​CAVA​ ​Group​ ​won​ ​The​ ​RAMMY’s​ ​Favorite​ ​Fast​ ​Bites​ ​of​ ​the​ ​Year​ ​and​ ​Restaurateur​ ​of​ ​the Year​ ​in​ ​2017​ ​and​ ​received​ ​Eater’s​ ​Editor’s​ ​Choice​ ​Award​ ​for​ ​Empire​ ​Builder​ ​of​ ​the​ ​Year​ ​in​ ​2016.
